experiment , making beer from bread w/o hops

Read in an article about how in ancient times bread was made and dryed to store the ingredients to make beer. The bead was soaked in water with bitter herbs . A cloth would be placed over it to keep out dust but let in wild yeast.

Heres what iv done. Toasted 2 slices of bread very dark and kept 2 white.

Add bread to 1 gal container
1 cup sugar
1 cup strong black coffee (add bitterness)
1 packet yeast ( im not trying this with wild yeast)
Sealed with airlock

Any idea if this will be drinkable? Lol
 
I read where the early Germans (about the time of the Roman invasions) used half baked barley loaves broken up in a kettle of boiling water with bitter herbs,etc. The let wild yeast get to it,then covered it. The invading Romans,upon trying it,called it "pig swallow".
