Is there any general guidance on how much yeast viability is lost when yeast is out of refrigeration for a day?
I always wonder how much viability is lost when I order yeast online -- it's about 2 days from package time until it's in my hand and I order an ice pack but I'm not sure how long that lasts in the summer months especially.
I'm trying to make sure I use good numbers when calculating how much yeast I'll need / starter size to make.
Is it sufficient to just go with the default viability of Mr Malty / YeastCalc? Or should I take the fact that it's been out for a few days into consideration?
