I wanted to make a wheat beer similar to Victories "mad king" so I thought I would do the following:
8lbs of American 2 row
6 pounds of malted wheat
Ferment with wyeast 3942 and hop with sorachi ace. My question is, will I have problems with mouth feel without adding dextrin or caramel malt. Also is a protein rest needed for this amount of wheat?
