Are you talking about Te'j the stuff that uses gisho roots? I think its also popular in Ethiopia that where I got the gisho roots.

I was under the impression it was like wine to the ancient Egyptians. idk, maybe they did use it in beer as well?...gotta look at the links.

Why brewing ancient Egyptian-style beer is so popular & how to make it

The maltose falcons had a great article on brewing with Bappir, but it looks like they're redoing their site and the old links don't work.

Found it http://archive.maltosefalcons.com/recipes/20051002.php

Some of my stuff is on that is here https://www.homebrewtalk.com/f13/brewing-bread-209505/#post2459997

You can also find that and more in my Beer History Sites Thread

Ah, but this could be because the Roman history writers (Pliny & al) were such winocentrics! Mentions of beer in many Roman sources are simply described as their type of "wine" which was what most people in those times and places thought of when they wanted an alcoholic beverage. Indeed the moniker Barley Wine still exists to this day...:off:

I remember the Germans using partly baked barley bread to brew beer with. The invading roman's called it "pig swallow". Guess it was still pretty cloudy...
