I recently brewed a continental pilsner using some Wyeast 2001 (Pils Urquell). Lager brewing temps weren't optimal because of the heat the past month (around 14C, but temps were up and down between10-15C all the time). I dry hopped in the secondary with cascade plugs and decided to "lager" after bottle conditioning as I don't have a fridge and it is now 20C everyday.
I ended up with a delicious beer! But it is nothing like I expected. Tastes like Hoegaarden (but without the orange or coriander needed). Any idea how this happened? I know Wyeast 2001 is supposed to be somewhat citrusy, as are the cascade hops, but I was not expecting this. I guess it could be some esters from the inadequate lager fermentation temps, but it doesn't taste like apple or banana.
