Is there any benefit to making one with the big ring and a smaller ring inside. ? (One solid piece) ?

Here's mine it cools really fast. More surface area in the wort. 10 mins or so to 75-80

That's what Im thinking. Cuz in my keggle 6gl is only up like 7 inches. So I kinda gotta keep it low pro
 
I have a double immersion chiller I use for 10-30 gallon batches, I only use one with small batches, and use them both in big batches. Each has it's own in and outflow, I can chill 30 gallons to pitching temp in 15 minutes or so.

Double connected coil seems like a good idea if you have height constraints.
