This is my first batch of cider. Up until now I have made fruit wines, grape wines from kits and beer from kits. So it will be my first sparkling beverage made from scratch. It has fermented out to below almost .999. I have two gallons, how much sugar do I need to use to prime it? Do I basically make simple syrup and add it to the cider before bottling?

Once it's primed and bottled I think I let it sit two weeks to carbonate. After that do I have to pasteurize? I'm guessing it won't last us longer than a month if that makes much difference.

The amount of priming sugar will depend on the size of the batch. For 5 gallons, if you want a sparkling cider, you can go with 3/4 cup of corn sugar more or less.
