Out of the blue tonight I noticed my wine showing signs of fermentation.

It was stabilized way back in late October and has been aging properly since mid November.

I dosed it with meta k on every rerack (1/2 tsp per gallon) and use potassium sorbate when I did a final stabilization.

As soon as I saw bubbles and signs I smacked it with more meta k and potassium sorbate but I was planning on bottling in another 4 weeks. It was tasting so good!

Should I delay bottling? Should I re-rack soon with more meta K?

FYI it’s about 10% abv and has been backsweetened up to 1.002, had to bring it up all the way from 9.992
 
My Marquette did the same thing, I spun the carboy back and forth to agitate the lees, it worked for a couple more days then settled down, luckily I am planning one more racking next month, that way I take my wine offany sleeper agents.
