Two different worts... combined... to calculate OG it is a simple average right?


1 gallon of 1060 and 1 gallon of 1080 = 2 gallons of 1070 right?


or, 2 gallons of 1060 and 3 gallons of 1075 +

((2x60) + (3x75))/5 = 1069

No, not quite but close enough. Accurate calculations are a PITA and not worth the trouble in the vast majority of cases. The "Why not?" is because "points" are not quite linearly related to the sugar concentration in a solution. The non linearity is, however, small.
