So I screwed up yesterday trying to rush a beer. After two weeks on primary, fermentation appeared to be done (IPA, OG 1.059, US-05). I moved the fermenter to the keezer to cold crash w/o taking a gravity reading. I was cleaning a bunch of kegs and the keezer trying to rush - yeah I know, dumb move.

I pulled the beer out tonight to transfer to secondary (keg) to dry hop and age. Gravity reading was only 1.029! Target is 1.014-016. I went ahead and kept the transfer going and placed the hop-sack in and sealed the keg.

Thoughts on how to kick-start this thing? I'm thinking I will warm the beer back up slowly, re-pitch the yeast cake into the fermenter and throw in some 1272 I have in the fridge.

Thoughts?
