I am about to hook two kegs up to one tank, do i need to double my serving pressure to say 16 psi? or will the 8-10 psi do fine for both?

No need to double the pressure. It would actually be a bad idea, as your pours would be too fast, and the beer would over carbonate over time.

Pressure is like voltage. You don't need to double the voltage to run two appliances.

Fine for both. If both kegs are downstream of the same gas regulator, they will both be at whatever pressure is set on the regulator. So, if serving at 8-10psi works for your setup - set it, forget it, and connect as many kegs are you need.
