Does anyone have any experience with "Cider Yeast"? I was looking at Northern Brewer and found this in their yeast list:

4766 Cider. Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.

This looks great to play around with, I'd love to try all kinds of fruit juices. Any ideas?

I used it on my last batch of Apflewein/Cider and like it very much. The first couple of batches I used the recommended wine yeasts but got a very, very dry Apflewein. This last batch I tried the Wyeast cider yeast and it leaves just a hint of residual sweetness. A very small hint. It's still pretty dry, but there is a great apple aroma and a bigger mouthfeel that I find very appealing. Give it a try.

I have used it on a plain cider and a cherry vanilla cider and both were great. I think it leaves more fruityness than wine yeasts, it tastes more like a cider than a dry white. Both of them went below 1.000, so they were quite dry, but didn't taste as dry as the champagne yeasts.
 
I'm just about to put together a batch tonight using this yeast. Sounds like it will be right up my alley!
