Cider recipe using Russet apples?

I have heard that Russet apples make great Cider without blending. I have an abundance of these this year and would like to find a recipe for say 180 liters. Anyone have any experience with using just Russets or at least a majority of Russets? (I also have other varieties so I could blend as well).

Cider, without blending apples? The recipe is straightforward:

1. Press the apples
2. Pasteurize the must (optional)
3. Add wine yeast (optional if you skipped step 2)
