Hey everybody!

I will brew my second beer of all time, can anybody come with some comments on my belgian inspired Christmas Brown Ale.

OG: 1.061
FG: 1.015
ABV: 5.99
IBU: 25
Color: 27.5 EBC
Batch: 10l

1.8kg Light dme
150g crystal 120
100g special b
100g dark muscovado
28g Tettnang 60min
15g Tettnang 15min
1 cinnamon stick 5 min
30oz sweet orange peel 5min
Yeast: us-05
 
Those specialty grains are pretty close (close enough) to what is in the Northern Brewer kit I am going to brew today (I am converting it to a partial mash with the addition of 3 lbs of Maris Otter).. So yeah, it should work fine... Only comment is that usually a less neutral yeast is used for these but I suspect 05 will be fine too...
 
UndeadFred, great! Yeah i know It's kind of "boring" yeast, but my problem is that i need it to work in a ambient temperature of 12-14 celsius. So, if there is other suggestions, I will be gratefull to hear about it :)
 
At 12C you should be brewing Lagers. ;) US-05 is rumored to be very "peachy" at that cold of a range. You might want to warm it up with a incandescent light shining on it or something... That is pretty cold for an ale..

Won't I have a problem with brewing lagers? I cannot get colder than 12 degrees. Or should that be just fine?
