Champagne with crown caps

Hey gang,
I have a couple of gallons of wine that I am hoping to attain champagne level carbonation with. I know that champagne bottles are necessary to handle that level of pressure, but I am wondering if the type of closure makes a difference. Can I use crown caps on champagne bottles I am hoping to attain a high pressure in, or should I stick with the plastic champagne stoppers (with cages).

From what little I've seeen (never made sparkling myself, at least not on purpose) but the beginning stages of the original champagne method uses crown caps while they're building carbonation, then the corks and cages are added after disgorgement. I don't see why you couldn't keep the crown caps on, they hold fine for beer. Of course the corks are so much fancier right?
