Has anyone ever used the canned Oregon fruit in mead?

For the price of 3-4 cans of those you can get a 48oz can of their winemaking puree, in that flavor. There should be no reason you cannot use the one in your photo though.

Does the fact that it is packed in heavy syrup matter? I'm assuming just boosts the alcohol.

Yes you will need to adjust the recipe. But it did work great for one of my Melomels. I don't think I would do it again but it did work good.

Would one of the 15 oz cans be enough for a 1 gallon batch of melomel?

You could make a basic mead up front, then add the fruit when you have dropped the SG by 2/3. Of course, the more fruit you have the better.
