Brussels brewer uses leftover bread to make beer

Never did it myself, but it looks like only a small percentage of the total malts used. This was also done by the Ancient German tribes at the time the Romans first came through. They considered it "pig swallow". They used partly baked barley loaves in the kettle.
 
Interesting idea, though I somewhat doubt bread waste is as much an issue in the US; most grocery stores sell more prepackaged bread than fresh bread.
