Thoughts on either method??

Some feel there is a hygienic issue with a spigot. Certainly during fruit fly season you risk those gosh darn flies finding your spigot is a good place to hang out. There is also the issue of the protruding spigot into the gar when the Scoby sinks during setup. That protrusion will hinder the Scoby rising to the surface. Sometimes the yeast will attach itself to the inner part, looking like the algae attached to wharf pilings.

A spigot comes in handy for larger brewing vessels when physically there are reasons carrying it may be unwanted.

Some prefer to use the mini auto siphon over the spigot.

Before investing, try a sun tea jar from a thrift shop. $3 is a better idea than $26. Tomlinson spigots fit sun tea if you decide to replace a used spigot.
