Hey all!

I am brewing today just ground my grains and am getting my strike water ready.

I have to leave from 10-12pm, was wondering if I can go ahead and mash and sparge, leaving the wort in the kettle for a couple hours before brewing?!!....

Anyone see any problem in this?? Please let me know as quick as you can!

no problem at all. i leave my wort in my kettle to cool naturally for 24 hours before i even pitch.
