I just recently started my first two batches. a maple syrup dark ale, 5 gallons, and a chocolate maple porter, 1 gallon. yes I like maple a lot. I'm about a week in, I'm moving my ale to a secondary & bottling the porter. I plan on letting my porter age for about 6-8 weeks.
the one thing I'm proud of so far is my temp control. Each batch is in a big plastic container in a waterbath. I have two aquarium heaters & I've been able to keep the water right where I want it so far. my only concern is that I'm usually gone on the weekends so it might fluctuate a little. I'm in the attic of my house, and boy does it get cold up there. I've left the heaters on their lowest setting and I'm hoping for the best. my next investment in brewing equipment will be one of those nifty temp controller things.
