I got water heating to mash and trying to clean house. I'm moving soon. Here is what I have to work with. Help me come up with a 10 gallon batch.

6# red wheat
6# flaked oats
1# special B
Centinneal
Cluster
Nelson

I'm going to have my wife pick up some yeast on the way home.
 
Here is what I am thinking and use a hefe and wit yeast for two different batches:

15 lbs Pilsner (2 Row) Bel (2.0 SRM) Grain 1 69.8 %
5 lbs Red Wheat (2.2 SRM) Grain 2 23.3 %
1 lbs 8.0 oz Oats, Flaked (1.0 SRM) Grain 3 7.0 %
0.50 oz Centennial [10.00 %] - Boil 35.0 min Hop 4 7.3 IBUs
0.50 oz Centennial [10.00 %] - Boil 20.0 min Hop 5 5.4 IBUs
0.50 oz Centennial [10.00 %] - Boil 5.0 min Hop 6 1.8 IBUs
 
Are you doing a 90 min boil? Is there any need to with all that pilsner?
 
I was listening to a podcast with the Brulosopher and he did an experiment with a 60 min boil and a 90 min boil with Pilsner malt in 2 otherwise identical batches. Then did a triangle test and nobody could really spot the difference. Would be a neat thing to try yourself!
