Hello,

Like many other people I have been using this site as a resource for a while, and have now decided to join.

I have been brewing for about a year and a half, and have stepped up to all grain for the last half a year. Before that, I did a couple extract kits, mead, and some basic sugar-water-yeast concoctions.

I am on my third batch since switching to all grain. Real excited for this one because its the first time I'm using oak in the fermenter. Should turn out to be a pretty big tasting stout. I am going to experiment with extended aging as well with this one, so I'm going to cork and cap them and drink them over the course of a year (if i have enough self restraint) and see how it evolves.

Welcome! Lots of us in the area. If you're looking for homebrew clubs, several of those in the area, also.

Read up on oaking, if you haven't already, before throwing it in there to make sure you don't over oak.

Also, if you're putting corks in purely for the purposes of aging, you're probably going overboard. I've got several beers over a year old with just caps. Most commercial barleywines are expected to age years with only a cap. If you want to make something different / pretty, go for it.
 
Thanks. I read a fair amount before I started this one. I opted for cubes instead of chips because it seemed those were less likely to overdo it. Just using a few ounces as well. I soaked them for a week in bourbon and now they are in the secondary and will be for a week before I bottle. Sound good?

yeah, I figured the cork would be a bit much. I was only going to do it on a few anyway. I mainly just figured since I have a corker it could be interesting to try.

Also, where would I look to see what clubs are in the area?
