Actually, it would be "...we have faith," which I think is a better translation. It's easy to believe in wild yeast--they exist--but to have faith that they will work with you and produce an excellent brew... well, that is a step above.

I went with the translation on the FAQ on their website. I'm not very well versed in Latin.
