how much head space should you on average leave when bottling to regular 12floz bottles?

It's probably about an inch or so.

Are you using a racking cane of any kind? If so, just fill, and when you remove the cane you will have the perfect head space!

yes i have a spring loaded bottle filler type device that came with my kit.. thanks
