Anybody have any experience using any type of flour as an adjunct? I tried to find rolled spelt, but ended up only being able to find flour. Is this usable in a mash? I am familiar with cereal mash techniques, but I am not sure if this would apply for a powdered material.

I don't think you'd need to cereal mash it. It's very closely related to wheat, and you can use that raw in the mash. I suppose you'd enter it as raw wheat in the brew calculator for mathematical purposes. It does sound like it could be a very sticky, doughbally mash and a very opaque end product.
 
Yeah, I have decided to keep the flour for bread and just use rye and wheat malt in my beers.
