Black cherry cider kinda like McKenzies?

I ventured into my first cider experiment a month or so ago just using store bought juice and White Labs cider yeast and I need to transfer off the cake (I know, should have done this a while ago) so I can start a new batch. Couple questions.

1. I'm kegging so can I add black cherry juice to get something like McKenzies then add something to stop fermentation once it hits the flavor /sweetness I'm after?

2. can I pitch on top of the old cake like I would an ale?
 
1 if you keep it under 40f you don't have to add anything more likely than not. But you can add potassium sorbate and potassium metabisulphite to be sure or if you want to store at room temp.

2 yes, you can just dump your new batch onto the cake
