Your cara malts also will greatly help. Add carapils or carafoam at about 3-5% of the grain bill to give you good head retention.

I've read oats actually decrease the head due to the oils, they're obviously essential though in an oatmeal stout. I use flaked barley often and love what it does for a creamy head.
