1. Lauter Tun dead space is the amount of liquid left in the mash tun when it stops flowing correct?

2. Selecting to "adjust mash volume for latuer tun deadspace" will increase the grist ratio correct?

1. basically yes - it's the volume of the mash tun that is below the spigot so cannot be drained (unless you tip the MLT)

2. this calculation will have you add additional water so that you hit your desired run-off volume, so, yes, the water-to-grist ratio will be increased slightly.
