Is this ok or do i risk infection? What is the best way to cool down your wort?

i wouldn't put bags IN the wort, but you can use bagged ice as part of a bath to chill wort. The best way for a homebrewer to chill wort is a plate chiller or a CFC

With partial boils, I stick the top off water in the freezer before I start brewing...by the time I am ready for it, it is close to freezing. Pour that into the hot wort and you're instantly at pitching temps.

here is a fancy one. Like brewt00l said, this stuff is mostly for people doing full boils

you can freeze water in 16 oz bottles, then sanitize the bottles and float em in the wort to cool it, without altering the liquid volume or contaminating.

you should ONLY add ice that you made from boiled water. commercial ice machines are often full of nasties, so bagged ice isn't a safe choice.
