This is the set up i have to work with... a 6 top burner and two pivoting 5-7.5 gallon kettles...

what should i make first?

Well what kind of beers are you into? I do agree with the stouts.

After visiting my local WOB, i've become a fan of all Heffe's, English nut ale, Rogue Hazelnut is amazing to me. anything ridiculously hoppy...

still working thru all the beers they have on tap.
 
is espresso one of those things you'd want to add after Primary fermentation? are whole espresso/coffee beans ferment able?
While I suppose you could add espresso to the boil and just treat the beans as another "grain", I'd add it after primary to keep the most aroma, possibly in the bottling bucket/keg.
Coffee beans are fermented before they're roasted. Roasting the beans probably makes all the sugars react and become unfermentable.
