Back sweetening with orig juice question

If I were to start with a 6 gallon bucket of juice with an OG of 1.09, about how much juice should I set aside for use in back sweetening to raise FG from dry to about 1.01 after fermentation?

I have never done it, but It sounds like the consensus is to go by what tastes good to you. But make sure to stabilize it first. (stop the possibility of fermentation).
