I think I let this one ferment a little hot... I used 1056 and it fermented for a little over a week @ 72/73 degrees. Just took gravity and it right about on but it tastes like plastic... I've used this yeast before but fermentation temp was around 68. Its been pretty hot around here in CT and I thought the stone wall basement would be fine. Any ideas?

Hold off judgment until the beer is finished. In my experience, a good tasting sample is a good indicator for good tasting beer, but a bad tasting sample doesn't indicate anything. It ain't over til it's over.

I have actually had this happen to me before. Does it taste a bit like drinking from a garden hose? I got that and reduced it to the hotter fermentation temps. I will say that carbonation did magic to it and helped to reduce it quite a bit but I am a perfectionist, other people loved it, I let them drink it...

Yeah kinda like that.... I still need to dryhop too so ill let it finnish up and make a call from there...
