So my girl and I are turning 30 this year, and we are wanting to make a stupid high abv beer for our birthdays. I plan on using WLP099. I originally wanted to just use a hopped up version of my basic barley wine that I just made, as I am maxed out at 24 pounds of grain in my mash tun. However, I just read that the hops will be lost to the high ethanol and long duration aging, so I am thinking of adding 7% of sugar and maybe even a decoction mash. I think that I can hit 25% at 3 gallons of beer. I have also read that a barrel would be best for something like this for the long aging, so I may need to add barrel spirals. Does anyone have a great recipe, any advice or any place to go?
