Hi all,

I am working on my first American Brown Recipe and was hoping to have any feedback that you could provide.

We are trying to achieve something that will have a rich malty body, nutty and caramel with a very slightly bitter finish of coffee.

Here is the recipe:

Style: American Brown Ale
SRM: 23.2 SRM SRM RANGE: 18.0-35.0 SRM
IBU: 27.1 IBUs IBU RANGE: 20.0-40.0 IBUs

Very interesting grist quantities, especially since this is your first recipe of the style. I take it the crystal is for caramel, the victory is for the nut flavor, and the chocolate and black patent are for that coffee bitterness? where are your hops? Anyway, may I recommend a special B addition? It will give you a really good malty caramel taste, otherwise I might swap your C60 for C80, it looks like you have some wiggle room in your style guidelines anyway. Overall it looks like it's going to be a good American Brown, what type of mash are you going to do/what temperatures are you using?
 
looks good. Which yeast are you planning on using? I just made a brown with WLP005 British Ale...and it is good, but there is definitely an English character.
 
Thanks for your advice. We brewed yesterday and it is in the fermenter. After a bit more tinkering this is what I came up with.


8 lbs 12 oz Pale Malt (2 Row) US (2.0 SRM)
1 lb 8 oz Caramel/Crystal Malt - 40L (40.0 SRM)
9 oz Caramel/Crystal Malt - 60L (60.0 SRM)
8 oz Chocolate Malt (350.0 SRM)
8 oz Victory Malt (25.0 SRM)
5 oz Aromatic Malt (26.0 SRM)
3 oz Black (Patent) Malt (500.0 SRM)

0.75 oz Amarillo Gold [8.50 %] - Boil 60.0 min
1.0 oz Amarillo Gold [8.50 %] - Boil 10.0 min
0.75 oz Amarillo Gold [8.50 %] - Dry Hop 10.0 Days

English Ale (White Labs #WLP002) [35.49 ml]


It smells terrific, my only fear is that I may have under hopped it. But according to BeerSmith it should come out to 31.5 IBU which sounds perfect for a malty American Brown.
