I'm also a farmer, and with wheat harvest approaching, I was thinking about brewing some all wheat 'beer' with unmalted HRWW straight out of the field. A grain to glass type of thing. I have some amylase purchased already. Anyone have any experience or advice?
I'm of the opinion that using wheat shouldn't limit one to the typical wheat beer styles of low hop profile and few roasted malts.
I plan to brew: all will be Magnum hops for bittering
wheat wine ~10%ABV 45IBU with Cascades and Amarillo
all wheat pale ale 30IBU with Cascades and Amarillo with some home roasted wheat in the oven. From what I've read about 350F for 15-20min ( wheat roasts faster because it doesn't have husks).
and a more typical wheat beer 20IBU with Tettnanger
