I know the general guidance is something like 6 months to a year on meads, but I was wondering if cysers peak earlier. Just wondering. I just racked one to the secondary, and though it's still cloudy, I'd probably drink it otherwise. The hydro sample was damn tasty.
 
Always let it age at least until its crystal clear. But just keep in mind, the longer you wait, the better it will get.
 
I always expect a mead or a cyser to take at least a year from the time it's crystal clear. Usually the higher the ABV, the longer the aging time. I suppose it's also a matter of personal taste & what tastes good to you. I've been aging a cyser for nearly 2 years now, about every 4 to 6 months I pull a sample for a taste just to see how it's progressing. Hope you find some of this info useful. Regards, GF.
