Aged IPA...Yum!

Digging through the back of the fridge, I found a beer labelled 9% IPA. Since I just kicked my latest IPA and haven't put the replacement on tap yet, I knew it was the perfect time to drink it. I am not sure when I made it, bit it was probably in the fall. Anyway it was frigging awesome! I was expecting an oxidized mess, but instead I got a nicely balanced strong IPA. Time has mellowed it but it's great!! Too bad it was my last bottle...
 
Right on. I've found that with my IPAs that are high in alcohol and hops tend to take well with aging. I even have a few Dogfish head 120 min IPAs in my basement for future enjoyment.

Maybe next time, set aside a few more bottles for the future? :D
