So I have a pound of Hopunion whole leaf centennial (A: 11.0%, B: 4.0%) that's been laying around the house for an old brew I never got around to. It's been stored in the house at room temperature and is probably 2-3 years old at this point (anyone know if there's a date stamped on these? I can't find anything)
From what I can tell, it seems to have that cheesy character to it. I'd like to brew in the style of a Lambic. I've read lower alpha hops are the goal and just a few ounces. Assuming 2 years at 70F the calculator at http://brewerslog.appspot.com/HopAlphaCalc estimates 1.6%. and 3 years it's a mere 0.8%.
Any advice on what I should shoot for? 2 oz of whole leaf hops assuming around 1% alpha for 120 minute boil is (calculating at) ~7.55 IBU.
Any tips or criticism will be much appreciated.
