This will be my third all grain hefeweizen attempt. The grain bill is slightly different:

5 lbs. Weyerman floor malted Bohemian Wheat
5 lbs. Weyerman floor malted Pilsner malt
1 lb. Crisp Torrified Wheat
1 lb. flaked wheat
1 oz. Whole Hallertau hops

I'm using tap water, but plan to add 2 ml of lactic acid and 2 grams of Wyeast nutrient for this boil.

I have Wyeast 3068 and WLP300 and I'm itching to combine and pitch both. I've used Wyeast 3068 previously, with good results.

I'll be using the nylon paint strainer bag, instead of muslin bags this time.

I opened my first bottle from batch 3 today, it's great, I can detect a little tartness which is what I was hoping for with the lactic acid addition. I will use the same recipe for batch 4, but only 1 yeast strain. Bottling this batch gave a better flavor, but I did tweak the recipe a bit, so I will have to keep working it to be sure.
