Hey guys, going to try brewing an american amber ale tomorrow for the first time and was wondering if you could give some input on my recipe. I did some research online and based on what ingredients I have available came up with this:

9LB 2-Row
1LB Carapils
0.5LB Crystal 60
0.25LB Crystal 120
0.25LB Chocolate

Mash 150F for 60min or until Iodine test shows full conversion

60Min Boil

1oz Centennial 60min
0.5oz Cascade 15min
0.5oz Cascade 5min
1oz Simcoe 0min

Dry Hop with 1oz Cascade

Ferment at 66F for 7 days with US-05, add Cascade hops and raise the fermentation temp by 1F per day for another 3-5 days.

looks good to me. i just brewed an american amber on sat. my only input might be to bump the mash temp a few degrees but it's not gonna matter that much.

Honestly I'd get rid of the chocolate.

If you're just looking for color then used a dehusked malt(like carafa). Otherwise I'd use ~15-20% munich to get color and flavor. Here is a recipe I have made a bunch, 11 gallon to give you an idea, obviously you're pretty close

Amt Name Type # %/IBU
14 lbs 8.0 oz Pilsner (2 Row) Bel (2.0 SRM) Grain 1 66.0 %
4 lbs 12.8 oz Munich (9.0 SRM) Grain 2 21.9 %
1 lbs Caramel/Crystal Malt - 60L (60.0 SRM) Grain 3 4.6 %
1 lbs Caramel/Crystal Malt -120L (120.0 SRM) Grain 4 4.6 %
10.6 oz Carapils (Briess) (1.5 SRM) Grain 5 3.0 %
1.90 oz Willamette [5.50 %] - First Wort 60.0 min Hop 6 18.5 IBUs
1.50 oz Chinook [13.00 %] - Boil 60.0 min Hop 7 31.4 IBUs
2.50 oz Willamette [5.50 %] - Boil 0.0 min Hop 8 0.0 IBUs
1.00 oz Nugget [13.00 %] - Boil 0.0 min Hop 9 0.0 IBUs
2.0 pkg Safale American (DCL/Fermentis #US-05) [50.28 ml] Yeast 10 -
5.00 oz Mt. Hood [6.00 %] - Dry Hop 0.0 Days Hop 11 0.0 IBUs
1.00 oz Nugget [13.00 %] - Dry Hop 0.0 Days Hop 12 0.0 IBUs

Thanks for the input. I brewed as per the recipe I posted but will brew it again using Munich and a mash temp of around 154F next time. Do you think 1oz cascade is enough for dry hoping 5 gallons or should I add more?

more. 2-3 oz per 5 gallons is my standard for pales ales and smaller IPAs.

Ive mashed that recipe at 152 and 154. Both results good, just different.

Thanks, I haven't dry hopped much so I wasn't to sure. I think I'll try 2oz Cascade and 1oz simcoe.
