Background:
I have a "raspberry" lambic brewing. I racked an english ale (OG 1.025) onto 8 lbs of raspberry/blueberry mix. I didn't read the gravity before or after racking.
It is down to 1.002 gravity so I racked it off the carcasses and into a carboy to age.
Questions:
It tastes pretty weak in the berry department, but tastes like a lambic just not very sour.
1. Will the aging bring more flavor despite having little to no sugar left?
2. Is there a cheaper way to get raspberry flavor than buying concentrate or more berries? Or even a cheaper concentrate?
3. Can I even add raspberry concentrate straight into the carboy without potential problems?
I was thinking of using this.
