Hello,

I'm wanting to brew up a RIS in the next couple weeks (to be sampled in the winter) and I'm still deciding on a choice of yeast.

Is there a yeast that will do well at slightly higher fermentation temperatures? I'm gonna try out a swamp cooler, but my place has been ranging from 70-74 degrees. As a little extra insurance...is there a yeast that works well in this range without too many off flavors?

Thanks for any suggestions and/or advice!

WLP001 works up to 75 degrees, you will get some esters but not too bad. I would think that if you could get your hands on the Bells yeast strain that would be a good choice as well.
