Lion Hart uses 50 gal. stainless steel wine fermenters. Around $800 a pop for each!

House Kombucha uses plastic fermenters.

Is House endangering the public by fermenting in plastic? Given the setups of these commercial operations, I feel the precautions often cited for home fermenting kombucha might be overblown. Thoughts?

I'm also interested in viewing other commercial/high volume setups, if anybody has any to share.
 
Kombucha precautions are more certainly overblown.
As long as you use a food safe fermentor, you'll be fine.
Not all stainless steel is created equal, likewise not all plastic is created equal.
If you have any questions about a product, before you put down any cash for it, contact the retailer or manufacturer and ask about what it is made of and if it can safely handle what you're wanting to make in it. If they can't address your concerns, or can't be bothered with you, you probably don't want to buy from them anyway.
