Hey Yall,
I just pitched a 1 liter starter of W3068 into 5 gallons Hefeweizen, stuck on a blow-off tube, and I'm seeing bubbles after 1.5 hours. The stick-on thermometer on the outside of the carboy reads 73 F.
My question is - I know that the beginning of fermentation is the most crucial period - but when do you move it to the swamp cooler? When you see a lot of bubbles or when you see the first one?
I need to keep it in the low 60's because I don't want a banana-bomb, but at the same time I don't want to arrest/slow fermentation.
Any thoughts?
