Can I ferment a 2 gallon batch of porter in a 5 gallon set up?

Sure can. I usually ferment my 2 1/2 gallon batches in a 6 1/2 gallon fermenter. No worries about the krausen fouling the airlock that way.

It's a valid concern. I would discourage opening the fermenter a lot. Maybe leave it longer until you are sure it's done, then check it and package.

Yes you can. I would not worry about to much head space. As long as you keep the fermenter sealed, you will be fine.
