Brewed a ton of beers at this point... going for my first 100% Brett fermented brew. Going with WLP644. I'm not brewing any particular style. Here is what I'm doing:

10lbs Pale Malt
5lbs Red Wheat
Magnum bittering to 35 IBU
Citra Hops 1/2 oz for flavor and aroma
Mashing for 1 hour at 158 to give the bugs plenty to munch on.

Any suggestions? I was going to ferment in the mid 70's with a 1/2 gallon starter.

Run with it. I suggest do a google search brettanomyces nhc. It was a presentation from Chad Yacobson of Crooked Stave. I tried to upload it for you but it was too big. Happy brewing.

Thanks, I just went with it.... so much for Brett being a slow starter... massive fermentation already. Ferm chamber smells amazing!
