what's done is done... but I pitched 1 wyeast slap pack of Octoberfest lager yeast this am at 50F and also threw a packet of safale lager yeast down in there. the recipe is similar to Jamils Munich Madness.
I had zero time to make a starter so my thinking was I really wanted the correct yeast character from the wyeast but was 100% sure I didn't have enough viable healthy yeast so the safale dry lager yeast can help it along.
I did notice that the dry safale likes to ferment from 53-60 ish to ill ramp up temp to 53 tonight later.
what have I done here? made a lame octoberfest or will it be alright? Im not necessarily nervous that this will turn out poorly but has anyone else done something like this?
