Dry Hopping Questions.....

Brewers,

Today I harvested my hop bines. The cones are drying in the garage. I would like to use these in a beer that I am presently brewing. My questions are:

1. How long after harvest are they ready to use in dry hopping?

2. Which cones are best for dry hopping, the larger ones, or the smaller ones?

Try to dry them to 8-10% by weight. And then they are ready to dry hop. Or brew. The size of the cones shouldn't matter much. Just measure out the weight you want to use and toss 'em in.
 
The guideline I've heard is 20% of their original weight when you picked them. Based on my experience, they would be dust if you waited for them to get to 8%.
