This is my second brew, I've brewed the NB Dead Ringer kit. I racked to secondary after about a week (when fermentation had subsided) because I needed the space for another brew. The beer has been in secondary for five days and as of yesterday afternoon it sits at 1.014.
Kit recommends 1-2 week primary, 2-4 week secondary and 1-2 weeks in the bottle. It was in primary for 10 days and now I'm on day 5 in secondary - but what am I waiting for? What's going on with the beer at the moment? My understanding is that 1.014 is a pretty standard FG for US-05, so should I start dry hop for a week and then bottle or should I wait for the 2-4 weeks that is mentioned in the recipe?
