wet t-shirts are always good...in many occasions.

...but in all seriousness, the wet t-shirt method is very effective in cooling down your fermenter.

what type of yeast did you use? those temps seem fairly appropriate for belgian yeasts.

the warmer = more esters (banana), the colder = more phenol (clove).

It came out great, it's all gone now The wet-tshirt method really works for me, since it's only 10% humidity, and 55-85 degrees in a day.

I brewed three more batches exactly the same way, using the wet-tshirt.

Now I've branched out into rice wine, and apple ciders.
